Lime Creamsicle Cookies

Happy Rosh Hashana to all of my Jewish friends!

I admit it. I’ve been so caught up in adjusting to my new schedule that I totally forgot to announce the winner of the giveaway of the OXO salad dressing shaker. Which we have been using constantly, by the way. Congrats to Meghan, who must be one of my “in real life” readers as I have no website for her! Thanks everyone for entering and I still suggest you run out and get one for yourself! It has been a difference maker in our house!

Cooling Lime White Chocolate Chip Cookies

As soon as I saw these cookies over at une gamine dans la cuisine, I knew I was making them. The time between my pinning of them and my making them was negligible, a matter of days. Of course how long it took me to share them is another matter. Ahem.

lime zest rubbed into sugar

One of the keys to these cookies is rubbing the lime zest into the sugar. It helps the zest to release all of its fabulous smelling oils into the dough better. Especially when you also then beat the sugar into the butter, further breaking it down. And for those of you who do not like white chocolate, it plays a supporting role here. The star is the lime and the cookies are not at all too sweet.

Lime Creamsicle Cookies

Thanks everybody for the nice comments on the post about Sammy starting full day kindergarten. Some of you asked on Facebook, etc, how *I* am doing now that she is in school? Well. I love not running back and forth to different schools or even the same school at different times. That part is fantastic. But I am not a particularly solitary person, so I need to be better about finding stuff for me to do that gets me moving, out of the house, social, etc. Even working on this blog (on my wonderful new MacBook Pro Thanks Mom and Dad!!! Thanks John!!!! AWESOME birthday present!!) would be better done out of the house. So along with volunteering at my kids’ school those things are my short term goals.

As far as these fabulous cookies go, I changed nothing in the recipe, so head on over to Valerie’s fabulous site to check out the recipe!

Those cookies sound amazing! I love lime, such an underused cookie flavor.

Hi! I’m Laura and I am a recovering history major who has re-channeled all of my passion for learning about the history of different countries to learning about their food culture. That doesn’t mean every dish on here is strictly authentic, but it does mean that even my adaptations are not undertaken lightly. My goal is to show you–by doing–that these dishes are possible in your kitchen. Including desserts because I have quite the sweet tooth! Read More…
