Black Beans With Mango Sauce & Savory Corn Cakes with Chipotle Cream

I was reading The Days Are Just Packed and experienced the strongest feeling of wishing desperately I had been present for a meal Vicci made: Black Beans With Mango Sauce & Savory Corn Cakes with Chipotle Cream. YUM. Since it looked so easy, the ingredients all immediately went onto my grocery list—I have trouble with a lot of non-Indian vegetarian dishes, so I was excited to try these.

 

I was not disappointed.

Both of these dishes are knockouts, and they complement each other so well it is astounding Mollie Katzen (the original inspiration for both) did not have them in the same cookbook. Ms Katzen apparently recommends rice with the black bean dish—but we liked it with the corn cakes (saving us from making an additional white carb). My husband liked it all piled together (as below), while the kids and I preferred the 2 dishes piled side by side. Either way, a fantastic combo. So extra thanks to Vicci for thinking to put them together. Everyone in the family cleaned their plates.

    Wow, just the title alone is making me salivate! That’s right up my alley. While I normally would have served something like this with rice, I’d love to try the corn cakes for a change.

    Laura I am so glad that you enjoyed these! 🙂 Both recipes went immediately into my “to try again” file. Not many actually do!

    I do need to mention that both of these recipes did appear in Mollie’s “Vegetable Heaven” cookbook, although when I went to her website to copy the recipes (lazy, lazy me!) I noticed that one of the dishes also appeared in “Sunlight Cafe” as well.

    Ad speaking of which, “SC” is a great cookbook, too, especially if you enjoy a varied repertoire of breakfast and brunch recipes.

    Now, back to packing…
