Peppermint Chocolate Shortbread cookies are a happy revelation for people who enjoy crushed candy canes during the holidays.

I was of two minds about whether to share these Peppermint Chocolate Shortbread cookies, so I finally settled on this quick post with a link to the recipe over at Bake from Scratch. Two minds because how you feel about this cookie is drastically impacted by how you feel about chewing candy canes. As much as I love peppermint, for me candy canes are for sucking on and letting slowly melt. Chewing them is just annoying.
Buuuuuut…. my kids loved these cookies. Like devoured them instantly and I don’t think John ever even had a chance to try them kind of love. My dad and sister agreed with me. My mom ran hot and cold, loving them at first but not as much later on.
So with that caveat…. you will notice my cookies are not identical. That is because if I were taking the time to make sandwich cookies (as in the original recipe), I knew I would not want the crushed candy canes, but I also wanted to experiment with crushed candy canes on a holiday cookie. So I rolled the dough into logs, chilled them and baked them as slice and bake cookies, which Alex then dipped into the chocolate ganache and sprinkled with crushed candy canes. And if you like crushed candy canes? My kids would tell you these are a winner!
