Vanilla (Biscoff) Valentine's Day Sprinkles Cookies

Ingredients

  • 1/2 cup (1 stick or 4 oz) unsalted butter
  • 3/4 cup Biscoff
  • 1/3 cup (2 oz) granulated sugar
  • 1/3 cup (2 1/4 oz) brown sugar, packed
  • 1 large egg
  • 1 large egg white
  • 2 T milk
  • 1 T vanilla
  • 2 1/2 heaping cups (10.5 oz) AP Flour
  • 1 t baking soda
  • 1 t salt
  • Valentine's Day sprinkles
  • chocolate hearts or kisses

Instructions

  1. Whisk together flour, baking soda, and salt, then set aside.
  2. With an electric mixer on medium-high speed, beat butter until creamy. Add Biscoff and beat until creamy and completely combined. Scrape down the sides and bottom of the bowl as needed. Add sugars and beat until light and fluffy.
  3. Add egg and egg white, milk, and vanilla; beat until incorporated.

  4. With the mixer on the lowest speed, add the flour mixture. Mix just until combined.
  5. Wrap dough in plastic wrap and refrigerate until firm, at least 2 hours.
  6. Roll chilled dough into 1-inch balls and roll each ball in sprinkles, completely covering the dough ball with sprinkles. Place about 6 balls to a cookie sheet--these will spread more than the chocolate version, so you want them to have space between them.
  7. Place the cookie sheets, with the balls of dough, into the freezer for 20 minutes. (You can also freeze the balls of dough close together on one cookie sheet if space is a problem and separate them for baking after frozen.)
  8. Bake at 375 degrees until set, about 12 minutes.
  9. After removing cookies from the oven, immediately place a Hershey Kiss or Heart in the center of each cookie. Press slightly. Let cookies cool on the baking sheet for about 5 minutes, remove to a cooling rack to cool.
