Mojo Saice (Latin American garlic and citrus vinaigrette)

  • 1/2 cup avocado oil*
  • 2-3 T (8 fat cloves) minced garlic
  • 1 t ground cumin
  • 1/2 t dried Mexican oregano
  • 1/2 t fresh chile pepper paste (or a thinly sliced hot pepper)
  • 1/2 cup freshly squeezed lime juice
  • 1/2 cup freshly squeezed orange juice
  • 1 t sea salt


  1. Heat the oil in a small saucepan over medium low heat. Add the garlic and let it cook until it begins to change color. Add the cumin and crumble in the oregano and turn off the heat. 

  2. Let the oil cool for 10-15 minutes. Stir in the fresh chile pepper paste, citrus juices and salt. 

  3. Store in a sealed container in the fridge and shake before using. Will last for 1 week.

Recipe Notes

*The original recipe calls for olive oil, but not extra virgin, which I do not even keep on hand. Use a mild but rich oil, do not use something super bland like canola.
