Watermelon Chaat (indian Snack Salad)
Everything about chaat is to taste, so feel free to increase or reduce any of these amounts.
Dry ingredients:

Ganthia
(deep fried thicker noodles made from gram flour*)

cup
salted and roasted pistachios

puffed rice cereal
Wet ingredients:

diced watermelon

lemon juice

chopped cilantro

chopped basil
(preferably a cinnamon or global basil)

diced red onion, soaked in cold water for at least 15 minutes and then drained

chaat masala

cayenne powder,
optional (see notes above), to taste

Toss together the dry ingredients. Set aside.

Toss together the wet ingredients.

Right before serving, toss the wet and dry together. Taste for additional cayenne, salt, lemon juice and/or chaat masala.
