Southern Italian Style Arugula Salad! I learned to love these salads all throughout southern Italy--mixed greens, but always arugula (sometimes only arugula!), corn, tomatoes, some protein. So when I got home I made some with American bacon and then tried 2 different fruits--cantaloupe and peach! Bliss!

Southern Italian Style Arugula Salad

All amounts are to taste. Obviously I usually include more lettuce and arugula than other ingredients. Prep time is mainly for cooking the bacon and shredding the cheese, so if you buy those already prepared the salad will come together much more quickly.
