Sesame Street Whole Wheat Brownies with a Minty Mocha Twist: Baking with Sammy

Ingredients

  • 1/2 cup whole wheat flour I used white whole wheat
  • 1/2 t baking soda
  • 1/4 t salt
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • 1/2 cup unsweetened cocoa powder I used natural, the recipe did not specify
  • 2 eggs
  • 1 t vanilla
  • approx. 7 oz of chocolate bars broken into chunks 1/2 espresso flavored and 1/2 mint flavored

Instructions

  1. Preheat the oven to 350F. Line an 8 inch square baking pan with parchment paper that hangs over the edges. Set aside.
  2. Melt the butter in a small-medium saucepan over low heat. Add the sugar and stir for 4 minutes or until the mixture is smooth and the sugar is dissolved. Remove from the pan and pour into a mixing bowl, scraping to remove everything.
  3. Add the cocoa powder and whisk smooth. Beat in the eggs and vanilla with a wooden spoon or spatula until completely blended.
  4. Stir in the flour until completely blended but do not over-stir. Fold in the chocolate chunks. Scrape the batter into the prepared baking pan and smooth the top evenly.
  5. Bake for 16-20 minutes, or until a cake tester inserted into the center of the pan comes out mostly clean. Let cool completely before removing the brownies from the pan (use the parchment overhang) and slicing.
