Matcha and Chia Mochi Cake

Ingredients

  • 1 cup glutinous sweet rice flour
  • 1 t baking powder
  • 1 t matcha powder
  • 1 t ground chia seeds
  • 1/4 t fine sea salt
  • 1/2 cup sugar
  • 1 cup coconut milk
  • 1 t vanilla extract
  • 2 T butter, melted
  • 2 eggs

Instructions

  1. Preheat the oven to 350 F. Line an 8x8 baking pan with parchment paper. Set aside.
  2. Whisk together the rice flour, baking powder, matcha powder, ground chia seeds, salt and sugar.
  3. In a separate bowl, whisk together the coconut milk, vanilla, melted butter and eggs.
  4. Mix the wet and dry ingredients together gently. Scrape the batter into the parchment lined pan.
  5. Bake for around 35 minutes, until the cake is lightly browned and cake tester inserted into the center of the cake comes out clean.
  6. Let cake cool in pan for 15 minutes, before gently lifting out and placing on a cooling rack to cool completely.
  7. Dust with powdered sugar before serving.
