Strawberry Lemon-Lime Pie: Alex Bakes!

Spring is here, and that means strawberries! And early spring also means citrus, so Alex combined the two in this Strawberry Lemon-Lime Pie.

This is not a proper post, more just an apology for my extended silence. I have been fighting a nasty sinus infection, and it has taken me out of commission for almost two weeks now!

In the meantime, however, I thought I would share one of Alex’s recent baking projects–because it is just so darn photogenic!

Strawberry Lemon-Lime Pie

We have chosen not to share a recipe yet, because we want to work on the filling more. We were aiming for a citrus strawberry filling, and we got that, but it could be better still. My gut says maybe lemon only next time, or lemon and orange. The crust is the crust from my mom’s Sour Cherry Pie–and truthfully that is what Alex wanted to make, but it is not sour cherry season yet. I purchased Alex several pie cookbooks–as it would seem she is this generation’s pie baker, so hopefully I will have more to share in the future.

Because of being sick, I missed this month’s Creative Cookie Exchange–and I am really bummed because the theme was meringue, which I think is perfect for spring! Go check out what everyone else made at All That’s Left Are The Crumbs.

    I love seeing the beautiful work that Alex does. This pie not only looks delicious but it is so pretty. Obviously it was very well received as I see an almost empty pie plate.

      Of course! But sadly it was processed lard–that was all we could get on short notice.
