Sopa Tarasca (Tarascan Soup) with garnishes
I don’t normally post round ups of previous recipes, but noticing all of the Cinco de Mayo recipes popping up everywhere around the web, it just seemed so silly that once again I had not gotten my act together in time. Especially when my site specializes in international recipes and double especially when Mexican is one of my favorites. So I started searching back through the years of this blog…
And discovered I *really* like Mexican soups. A taco and casserole here and there, but the vast majority of my Mexican recipes are for soups. And I happen to think Mexican soups are fantastic for a Cinco de Mayo party, because usually they are accompanied by a wide variety of vibrant, tasty garnishes. And what is more fun than assembling your own meal at a party? Here are some of my favorites to choose from, including some of the tacos and casseroles as well.
Mexican Cheese and Summer Squash Soup
Layered Tortilla & Tomato Casserole With Butternut Squash Hash and Melted Cheese
Posole With Eye Of The Goat Beans & Shredded Chicken
Bacon, Pork & Potato Tinga Tacos
Arroz con Pollo y Frijoles y Calabacitas (Chicken and Rice with Beans & Zucchini)
Mexican Spicy Roasted Shrimp & Potatoes Stew
Calabacitas With Seared-Then-Simmered Pork Tenderloin
Can I tell you that I have had that butternut squash hash tortilla casserole bookmarked for FOREVER! Whoa. Need to make that soon! I’m so glad you reminded me!
