A Few Confessions and A Case for Cake Simple

by Laura on March 1, 2013

Miniature unglazed mojito bundt cakes

I have some confessions to make. First, I am having trouble getting my mojo (read: routine) back since being sick for so long, which means I have not been cooking quite as often. So the baking parade continues…

Mojito Bundt Cake

Next, as you know, I have started participating in some fabulous blogging events (Chocolate Party and Bundt a Month)–but they have specific posting dates, which means I am in the unexpected position of having only 2 recipes to share, and neither of them can be shared yet.

Rosemary Olive Oil Bundt Cake

And the last, and most heinous confession: I have been holding out on you guys for some fantastic recipes. The reason is simple. I just cannot in good conscience share any more recipes, no matter how adapted, from Christie Matheson’s Cake Simple: Recipes for Bundt-Style Cakes from Classic Dark Chocolate to Luscious Lemon-Basil. It is just not fair, because it is such a small book. A small yet incredibly brilliant every-single-recipe-is-fantastic book.

So if you want the recipes for the Mojito Bundt Cake, pictured at the top, or the Rosemary Olive Oil Bundt Cake, pictured below it, you will just have to purchase the book!

Gorgeous pics Laura, and the cakes sound marvelous. Sorry to hear that you’ve been sick (like too many this winter) – hope you’ll feel tip top soon. I didn’t know about Cake Simple, but I’ll have to check it out.

Hope you are back to feeling like yourself soon. I can relate to the cookbook “problem”– I have made a number of cakes from Lauren chattman’s book, Cake Keeper Cakes, and they are all fabulous. One more to share next week with Bundt A Month! Looking forward to your post.

I saw this earlier and thought I already left a comment. I must have drooled and passed out from the delish photos! This is another delightful baking idea – must make this one soon. Thanks for sharing, Laura! Happy Sunday :-)
